Seafood

A hearty Christmas meal is one of the most celebrated aspects of the season. So naturally, several spots on a festive provisioning list are reserved for items of food, including meat and sustainably sourced fish and seafood.

The long tradition of eating seafood on Christmas Eve dates from the Roman Catholic tradition of abstaining from eating meat on the eve of a feast day. As no meat or animal fat could be used on such days, observant Catholics would instead eat fish fried in oil.

Foie Gras

“Foie gras” which translates to “fatty liver” in English is a “luxury” food that’s made from a duck or goose’s liver.

This delicious treat has long been a French delicacy, and is now internationally popular, due to its rich, buttery distinctive flavour.

It’s typically sold whole or prepared into mousse, parfait, or pâté. Typical foie gras accompaniments include dried fruits or nuts, or simple sauces such as honey or fig chutney.

Caviar

While caviar falls into the broader category of fish roe, not all fish roe is considered caviar. True caviar comes from several species of wild sturgeon, which belong to the Acipenseridae family. Of the 27 sturgeon species, almost all can be harvested for their eggs but beluga, sevruga, and osetra have long dominated the caviar world.

The rarest – beluga caviar – is the largest and most expensive caviar. At close to $3,500 per pound, it deserves its nickname, “black gold.”
